Homemade Baking Mix

Ingredients:

9 cups  – All-purpose flour

5 TBS – Baking powder

1 TBS – Salt

¼ cup – Sugar

1 cup  – Shortening

Directions:

Place all ingredients in large mixing bowl.  Cut in shortening until mixture is crumbly. * Store in large air tight container.

*Since it is now difficult for me to cut in the shortening. I now use my Ninja blender four cups at a time.

Baking Mix can be used in the following ways:

Pancakes: 2 cups mix, 1 egg, 1 ½ cups milk.   Mix ingredients well. Drop by spoonful’s onto griddle. Cook & enjoy! Yields: 6 pancakes. *I add chocolate chips for my kids.

Biscuits: 2 cups mix, ¾ cup milk.  Mix well.  Bake @ 400° for 15 minutes.

Muffins: 2 cups mix, 1/3 cup sugar, 1 egg, 1 ½ cups milk.  Mix well.  Bake @ 450° for 15 minutes.

Coffee Cake: 3 cups mix, ½ cup sugar, 2 eggs, 2 cups milk. Mix well.  Sprinkle top with Streusel Mix.  Bake @ 350° for 25-30 minutes.

Streusel Mix: 1 cup walnuts, ½ cup brown sugar, 2 tsp cinnamon, 2 TBS butter.  Mix well.

I decided to write at the bottom of the recipe. It’s very hard for me to search for recipes on the internet now (I’m not letting it stop me), because everything blurs after a bit.

Out of necessity for learning how to live frugally, I began searching for ways to learn how to cut back on expenses.  One of the ways was to start making my own Baking Mix (aka Bisquick Mix).  After experimenting with several recipes and tweaking them, the above recipe is what my family loves for me to use. 

We had someone give us a box of name brand pancake mix and I used that because I didn’t want it to go to waste.  When I used it my kids said, “Mom, I don’t know what you did different, but we like your homemade mix better.”  That was actually music to my ears because sometimes in my experimenting I’m not so sure it’s going to go over very well.  I have enjoyed making this ever since.

I recycled a large plastic Utz pretzel container to store my mix in.  I can usually double the batch and it usually lasts my family two months or so.
