Stuffed Pepper Stew

 

Ingredients:

  • 1 lb ground beef, cooked and drained
  • 1 small onion, diced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 2 tsp Italian seasonings
  • 1 tsp garlic powder
  • 2 (14.5 oz) cans of diced tomatoes
  • 1.5 cups beef broth
  • 2 cups cooked rice

Directions:

Brown ground beef.  Drain fat.  Add ground beef and rest of ingredients to slow cooker.  Cook on low for 6-8 hours.

Notes:

  • Prep time: approximately 10 minutes
  • Cuisine: American
  • Serves: 6-8 people
  • Leftovers can easily be refrigerated for 3-4 days.
