Since my lightning strike, one of the ways I have learned to adapt is by finding ways to make life simpler, especially when I have difficulty doing normal day-to-day chores. Learning to make rice in the slow cooker has made cooking rice so much easier. The best part is that it always turns out delicious!

Easy Slow Cooker Rice
Ingredients:
- 1 cup rice
- 1.5 cups water or broth
- Non-stick spray
Directions:
- Spray inside of slow cooker with non-stick spray.
- Pour in rice and water. You can add salt to taste if you’d like.
- Cover and cook on High 1.5 to 2 hours, stirring occasionally.
Notes:
- Serves: 4 people
- For Yellow Rice: add ½ teaspoon of turmeric and 1 teaspoon minced garlic
- You can add pizzazz to the rice by adding vegetables and seasonings, or you can experiment with it to make it your own. Simply keep the rice-to-water ratio at one part rice to two parts water.
